Some of you may already have this recipe, but it's really yummy! It's also from a friend of my mom & dad. Also, it is not low fat. :)
Poppy Seed Chicken Casserole **Serves 6-8**
Preheat oven to 350.
Ingredients
6 chicken breasts cooked and boned (I actually take 3 or 4 and boil them and shred the chicken. It's much yummier that way!)
2 cans cream of chicken soup
8 oz. sour cream
1 stack Ritz crackers
1-2 t. poppy seeds
1/2 stick margarine or butter
Layer chicken in buttered 9 x 13 casserole. Mix soup & sour cream in small saucepan. Heat thru and pour over chicken. Crush crackers. Combine with poppy seeds. Sprinkle over soup mixture. Melt margarine. Drizzle over top. Bake for 30 minutes at 350 or until bubbly. Serve over rice.
It's also good leftover! Hope you like it!

No, I'm sure I have seen this on the seafood diet! Ummm, maybe that was the See Food diet. I see it and I want to eat it! hee hee
